Vinsanto represents, for Chianti culture, the wine of hospitality, friendship and Holy Mass.
The Cantagallo Estate produces only Chianti Montalbano Reserve Vinsanto using natural and ancient systems: after the harvest, the selected bunches of Trebbiano and Malvasia grapes are hung from the ceiling in our Vinsantaia, a room used for drying our best Vinsanto grapes. The hanging bunches remain in natural drying until January, when the heavily dried grapes are pressed in our manual wine press and the 'nectar' obtained is immediately fermented in our barriques.
This is where the wine is aged in wood for about 5 years. Once the barrique ageing period is over, the Vinsanto is tasted by Enrico and Dario and only the qualitatively excellent one will be bottled for our Riserva and aged a further 12 months in the bottle before being put on the market.
The production of our Millarium Vinsanto del Chianti Montalbano Reserve is extremely limited.
We recommend to serve the Vinsanto Millarium Riserva at 14-15°C in glasses that enhance its complexity as it is a wine of great structure and intensity.
